meatloaf

Please don't laugh at me, but I'm really excited about the meatloaf I made last night. To me, meatloaf is the quintessential comfort food. When we were newlyweds, I was heartbroken (okay, I'm exaggerating a little bit) to find out that Matt hated it. Of course, I only found this out after I put it on the table which was double the heartbreak. Later, after years of going without it, I decided I was going to try to make a meatloaf that Matt would like. It turns out that he hates the big watery onions in most meatloaf and he thinks it isn't flavorful enough, so I set to work. I won't get into all of the details here, but I think I came up with some pretty good meatloaf, which Matt and the kids LOVE!!! It also happens to be very good for you and really tasty. Here's the recipe:

1 lb. lean ground beef
1 lb. ground turkey breast
1 cup of milk
1/2 cup bread crumbs
1 egg
1 T. worchestershire sauce
1 T. each of basil and oregano
1 cup frozen chopped spinach, thawed and drained
salt and pepper to taste
1 T. wheat germ, optional
2-3 cloves garlic, peeled and cut in small pieces
1 very small onion or half an onion, quartered

Preheat oven to 350. Put first 10 ingredients in a bowl and set aside. Put onion and garlic in a food processor and puree until it looks like mush. Add the mushy stuff to the bowl and mix it all well with your hands. Dump it into a bread pan and bake it for at least an hour, or until the internal temp is 160.

If you like ketchup on it, you can mix 1/4 cup of ketchup with a couple Tablespoons of Worchestershire sauce and spread that on top in the last 10 or 15 minutes of baking.

Okay, is it arrogant to post my own recipe on my blog? I'm obviously still posting it, but is it tacky to promote your own cooking? I hope not.

No, not tacky at all. You're sharing a good recipe with whoever wants to try it...though if you're concerned about someone stealing it for profit then you might want to add a creative commons license disclaimer to your blog.

I have to confess that I have disliked meatloaf ever since my mom started making when I was a kid. The worst was when she'd stuff it into green peppers. I also very much disliked the tomato sauce topping. Like Matt, I disappointed Pam a long time ago with my disdain for meatloaf.

However, give me a plate of Big River's meatloaf and I will devour it. I think it is the combination of the sausage and the fact that they cook it a second time on the grill 9okay, and the gravy is good, too). I may have to try your recipe with some sausage (or turkey sausage).

Heck No it's not arrogant! If you found something good share it! I still use my gma's recipe which has the onions, and I understand Matt's dislike, but I guess you can chop them up good. I've put carrott or zuchinni in mine and oatmeal. Yours has alot of ingredients compared to mine! But the worchestershire sauce sounds yummy! My gmas version also has a catsup, mustard and brown sugar glaze which is sweet for those who like sweet. I have also completely gone ground turkey for our house (Kroger regularly has it as cheap as beef, an ATL perk). Turkey makes it less greasy and lighter. We feel gross these days after eating ground beef. Yeah, for kitchen sucesses!

Cool, I'm going to try this recipe while I'm staying with my sister. My husband doesn't like meatloaf either - bad past association. I love it and I've always been kind of embarrased about it because so many people think it's gross. My husband and I are really healthy eaters (all organic and such) so it's good to collect healthy recipes from people. Thanks!
